A book that W. Jeffrey Hurst, Ph.D., FAIC edited, Methods of Analysis for Functional Foods and Nutraceuticals,  has recently been published by CRC Press.  Dr. Hurst is a senior staff scientist at Hershey Foods Technical Center.   Nutraceuticals and functional foods are food components that provide demonstrated physiological benefits or reduce the risk of chronic disease, above and beyond their basic nutritional functions.
